Description
Local heirloom grains are featured in this naturally-leavened, slow fermented round. Pre-soaking the whole grains improves the nutritive value, digestibility, and results in a delicious, nutrient dense loaf. The porridge process also allows for a higher hydrated dough, lending the finished loaf an exceptionally supple crumb and extended shelf life.
Ingredients: Sifted organic whole wheat flour, water, wild rice porridge, organic rye flour, organic spelt flour, sea salt
