Description
A sourdough loaf made with all local grains. A kind of porridge is made from local barley that has been through a process called “floor malting” in which the grains are sprouted and gently hand-raked throughout. This sprouting method creates a natural sweetness in the barley grains which subtly infuses the whole loaf. Our barley is sourced from Blue Ox Malt House in Lisbon, Maine. The loaves are available in two shapes, a pan loaf or a batard loaf.
75% high extraction flour, spelt, salt, malted barley, high extraction starter.
